Bitter gourd (Bitter Melon)with Black Pepper Chicken

I thought up this dish in combination because my hubby and I just simply love bitter gourd (or some call it bitter melon) and there is this pre-marinated chicken thigh that I discovered at the supermarket at really affordable price. Remember what I cook is not extravagant. It is just putting together low cost ingredients to create beautiful dishes.

This dish is good to go with either porridge (congree), fry bee hoon or rice.

You just need:

1 clove of garlic, minced

1 packet of pre marinated black pepper chicken thigh (cut into small chunks)

1 bitter gourd (if there is just two of you, find a shorter/smaller one, so that you don't end up in bitter gourd overdose), spoon out the pulp and seeds and slice them

Some olive oil

A dash of chinese cooking wine

A handful of cashew nuts

How to do it:

1. Heat the pan with some olive oil. Once the pan is slightly heated up, add in the chicken, cashews and bitter gourd with a dash of chinese cooking wine and stirfry till chicken is cooked and bitter gourd is slightly soften.

2. If it is s little too dry, you can add a little water.

3. Ready to serve

Curry Chicken on the fly....

I was just thinking if I should really put this up. Reason. Simple. Seriously, I thank those who come up with these stuff just so we can whip it up, no sweat.

I always wanted to cook up a pot of chicken curry. Why not? goes well with just fried bee hoon or better, with Ms Baguette. But I made white rice instead.

So here's how I made my pot of curry chicken, after work.

Ingredients (serves two):

1 instant curry mix (here I used New Moon brand)

Chicken drumlets and wings

3 medium potatoes (washed, peeled and cut to quarters)

3 tomatoes (washed and cut to quarters)

Water (2 cups)

100ml of milk

1. Seriously, you just add all the above ingredients and bring them to boil for about 25 mins. Check that the potatoes are soft. When it is almost done, add in the milk and stir.

There you have it, just one dish for your dinner, enough to make you burp all night.
